A fairly simple way to prepare pizza directly on
a grill. Delicious.

Ingredients:
Your favorite homemade pizza dough
recipe, or for lazy cooks like us, 1 supermarket pizza
dough ball. All markets in our area carry these in their
bakery dept., either frozen or refrigerated.
Vegetables or meats of your choice. Our
favorites are red peppers (grilled until blackened, then
skinned) and Vidalia onions.
Shredded mozzarella cheese
Pizza sauce of your choice
Oregano
Fresh basil, if available.
If frozen, thaw the pizza dough. Let rise an
additional hour or so after it has completely reached room
temperature.
Split dough into two balls, for easier handling
on the grill. Roll out the dough into two pizzas. Depending on
the size and shape of your grill you may want to make these other
than round. I make two oblong pizzas, and they both fit on my
grill at the same time. The dough should be very thin, less than
1/4 inch thick.
Preheat the grill, then grill your toppings to
desired doneness. Remove toppings from grill.
Brush both sizes of the dough with a generous
amount of oil, preferably olive oil. This prevents sticking on
the grill and also adds flavor.
Place the dough on the hot grill, directly on the
grate. Close the lid, and cook for 1 minute. The crust should
have large bubbles rising up. Using your hands and a turner, flip
the crusts over. Close the lid and cook for one minute more. Open
the lid and spread the sauce on the crusts, followed by the
cheese, oregano, basil, and pre-grilled toppings. Continue
grilling until the cheese melts and the crust is the desired
doneness, usually a minute or so. Remove from grill and serve
immediately.
